The flour used in our Chef's various preparations comes from Saint-Grégoire, from the Moulin de Charbonnière, which has specialized in buckwheat flour since the early 1920s!

Our farmhouse cheeses come from the Ferme de La Moltais, in Gévézé, north-west of Cesson-Sévigné. They are made on site by farmers Stéphanie and Benoît CHAUVIN who make their cheeses from the milk of their cows fed mainly on grass.

Our poultry is raised in Janzé, famous for its chickens, capons, turkeys and poulards. These birds have enjoyed a reputation since the early 1900s, and can be felt once on the plate.

Our beef comes from the Loire-Atlantique, more precisely in Sudan, a small commune located 60 kilometres south of Rennes. Mr Hervé Hunault raises AOC beef with the greatest care.

If oysters are on the menu, they come directly from the EARL Huitres Desrais located at 8 Rue de l'Huîtrier in Cancale. The city of Cancale has been famous since time immemorial for its wild flat oysters and since the middle of the 20th century for its farmed hollow oysters.
